This dish features everyone’s favorite combo of ham, egg and cheese and are an absolute must-try! Particularly if you’re a fan of understated yet delicious traditional savory flavors.
The best thing about this dish is that from the time you pull the ingredients out of the refrigerator you can have it on the table and ready to eat in about 10 minutes. No prepping or precooking required, just a quick, easy meal! These Ham Egg Cheese Quesadillas are such to be a hit in your house!
Ingredients for Egg and Cheese Quesadillas

- Tortilla: a low carb, gluten free, flavored or traditional tortilla.
- Butter: alternatively, for a lower calorie option you can use cooking spray.
- Ham: sliced deli ham, chopped ham, or left over Sunday ham work perfectly.
- Egg: soft scrambled eggs, be sure not to overcook to prevent dry eggs.
- Cheese: I use a combination of Swiss and cheddar, although you can use your favorites.
How to make ham and cheese quesadillas
First, heat a skillet to medium heat and add butter. Place your tortilla in the skillet and add cheese, eggs, ham and salt and pepper to taste. Cook for 3-4 minutes until it starts to brown, then fold the other side of the tortilla over. Cook for 1-2 more minutes (flip if needed) and you’re done! The perfect ham and cheese quesadilla!
Can I use a different meat in ham and cheese quesadilla?
Of course! As I mentioned earlier, quesadillas are super versatile, so feel free to swap out any ingredients you like. Replacing the ham with bacon or chorizo (or black beans for a vegetarian option) all work amazingly, but the world really is your oyster here.
Can I freeze these egg and cheese quesadillas?
Yes – quesadillas can be cooked up in advance and frozen, making them an ideal option for meal prep. Once your quesadilla is prepared, simply allow it to cool down completely, before tightly wrapping it up and popping in the freezer. It is super important that you do not skip the cooling process. Wrapping a warm quesadilla traps in moisture and will result in a soggy dish when you reheat.
How to reheat Quesadillas
- Reheating in a Skillet: Quesadillas are best reheated in a skillet or oven to help them retain as much crispiness as possible. To reheat using a skillet, firstly add a very thin layer of spray oil on a medium heat and allow this to warm through before adding your quesadilla. Heat each side for a minute or so, or until the ingredients are hot and melted, keeping an eye out to ensure the tortilla doesn’t burn.
- Reheating in an Oven: To reheat in the oven, preheat your oven to 325 degrees Fahrenheit. Pop your quesadilla in for around 10 minutes – again keeping a close eye throughout.
- Reheating in a Microwave: Heat in 30 second increments until warmed through, flip after heating the first minute.
- Reheating in an Air Fryer: Preheat the air fryer to 325 degrees for 3 minutes. Add the quesadilla and reheat 3 minutes, flip and reheat 2-3 more minutes until warmed through.
Tips for the Egg and Cheese Quesadillas
It could be said that making the perfect quesadilla is something of an art form! Here are my top tips for the perfect crisp quesadillas:
- Use Butter: You can cook the quesadilla in a skillet that has been lightly greased with spray oil, however I find the best flavor and texture is achieved when the skillet has been prepped with melted butter.
- Don’t overcook the scrambled eggs – they finish cooking inside the quesadilla, and you don’t want them to become dry.
- Be careful not to overfill. I know – it’s tempting – but quesadillas do turn out best when they’re kept light and not overly packed with ingredients.
- Be patient! Don’t fall into the trap of frying your quesadillas on a very high heat, as tortillas do burn fairly easily. Using a medium heat will help prevent this, whilst ensuring your ingredients are still melted to perfection.

Ingredients
- Butter for the skillet
- 1 tortilla (low carb, gluten free, or regular)
- 2 eggs, soft scrambled
- 1/3 cup chopped ham
- 1/4 cup shredded cheddar
- 1 slice Swiss cheese
Instructions
- Heat a skillet to medium heat. Add enough butter to lightly coat the skillet. Place the tortilla in the skillet, top with the cheese, soft scrambled eggs, ham and salt and pepper to taste.
- Cook the open tortilla 3-4 minutes until it has begun to lightly brown, fold the other side over to complete the quesadilla.
- Cook 1-2 more minutes, flip the tortilla if needed.
- Serve immediately.
