This quick grilled chicken wrap has become our new favorite lunch! Do you have the same old odds and ends that end up in your fridge? I always have lettuce, tomatoes and parmesan. I usually make small side salads a few nights a week to go with our meals and I love using the extras for wraps.
Lately, we have been on a major Italian kick. I’ve been doing our “at home” version of the classic Olive Garden salad. You know the one, romaine, parmesan, red onion, tomatoes, jarred Pepperoncini peppers, black olives and Italian dressing. If you enjoy that salad you will love this wrap!
What ingredients do I need to make a Italian chicken Wrap?
The beautiful thing about this recipe is that you can customize this based on your preferences. However, as written these are the ingredients I used.
- Tortilla- gluten free, low carb, flavored- whatever you prefer!
- Chicken- marinated
- Lettuce- Romaine
- Tomatoes- chopped
- Parmesan
- Italian Dressing
- Pepperoncini peppers
How do you make Grilled Chicken Wraps?
First, in a bowl add the torn lettuce and toss with Italian dressing and parmesan. I prefer to do this instead of pouring the dressing directly onto the wrap because it is evenly distributed and keeps the wrap from getting soggy. Next, heat the tortilla in a skillet or microwave for 10-15 seconds until pliable.
Following this, add the lettuce in an even layer across the tortilla. Place the sliced or shredded chicken down the center of the wrap, with the tomato and pepperocini peppers on each side. Add salt and pepper to taste and tightly wrap.
You can use any kind of cooked chicken you prefer. This is an excellent way to use up leftovers, a rotisserie chicken or your favorite kind of grilled chicken. I used the grilled Italian chicken below.
How to grill chicken for Italian Chicken Wrap
A quick and easy way to grill chicken that happens to be perfect for this wrap has just three ingredients:
- Chicken breast
- Italian Dressing
- Minced Garlic
First, to make this grilled Italian chicken I marinate a pound of boneless skinless chicken breast in 1/2 cup of Italian dressing and 1 tablespoon of minced garlic for at least 1 hour but up to 24 hours. Next, to cook the chicken I heat a grill to high heat (approximately 400 degrees) and grill 4-5 minutes on each side or until it reaches an internal temperature of 165 degrees.
Allow the chicken to rest 5 minutes before slicing. This is great for easy meal prep. You can easily store this grilled chicken in the fridge all week to make quick wraps, salads or to enjoy with your favorite roasted vegetables.
Is this grilled chicken wrap good for meal prep?
Absolutely! This Italian chicken wrap is great for meal prep. Simply grill your chicken, allow it to cool, slice and assemble your wrap. I like to put a toothpick in mine to make sure it all stays together. Place in an airtight container and you’ve got lunch! This wrap will stay fresh for up to four days in the fridge.
