My husband has a deep affinity for breakfast burritos. In his book there just isn’t a better way to start the day than with a warm tortilla packed with eggs, cheese and some kind of breakfast meat! This Sausage and Spinach Breakfast Burrito gets a lot of play in our house, but today I’m sharing his all time favorite!
This Bacon Egg and Jalapeño Breakfast Burrito is a very close second! It is a southwestern spin on a classic breakfast burrito. The addition of pepper jack cheese and jalapeño adds a spicy flair and pairs perfectly with crispy bacon and scrambled eggs.
What ingredients do you need for a Bacon Egg and Jalapeno Breakfast Burrito?
- Tortilla: traditional, gluten free, low carb or spinach and herb all work well
- Scrambled eggs
- Pepper Jack Cheese
- Bacon
- Jalapeno: pickled or if fresh, seeded and sliced
How do you make a breakfast burrito?
- Heat a large skillet to medium heat and lightly spray with cooking oil or add a small amount of butter.
- Sauté the seeded and diced jalapeño (you can also add it to the wrap raw if you prefer) when the pepper is tender, remove from the skillet and set aside.
- Using the same skillet heat the tortilla until pliable.
- Assemble the breakfast burrito by adding the pepper jack cheese, scrambled eggs, cooked bacon and jalapeños. Add salt and pepper to taste, wrap tightly and slice.

How do you freeze breakfast burritos?
- Cool the fillings for 10-15 minutes before assembling the burritos. This reduces the moisture level so your breakfast burritos are not soggy.
- Assemble the breakfast burritos according to the directions with the COOL fillings and wrap tightly in foil.
- Freeze in a single layer overnight, then transfer to a freezer bag.
How do you reheat breakfast burritos?
- Remove from the freezer and discard the foil. Heat on high in a microwave for 1 minutes, then additional 30 second increments as needed until it is heated through. Alternatively, you can heat in a conventional or toaster oven at 350 degrees F for 10-15 minutes until heated through.
