These simple Pepperoni Wraps make the perfect “no cook” meal when you want all the flavor and none of the work! Gluten-free, low-carb, and keto-friendly if you pick the right wrap!
Having a few easy no-cook meals that work year-round is my dream. Salads are often my go-to in the heat of summer (like my favorite Wedge Salad), but once the weather gets cooler, I want something a bit heartier. That’s the great thing about wraps, though–They’re perfect for warm or cool weather!
This wrap includes pepperoni, mozzarella, and spinach to fill you up, pepperoncini peppers to keep things just a tad spicy, and a pesto aioli to bring all the fresh flavors together! If you’re keto, just wrap it all up in a cheese wrap, these Keto Zucchini Tortillas, or a low-carb tortilla! It makes a super easy meal that’s easy to pack.
These Pepperoni Wraps travel perfectly–The wrap won’t get soggy as it sits in your lunchbox! You can meal prep these by either making the wrap entirely or by putting all the components in a bento box, then wrapping it all up when you’re ready. No heating or cooking required! Ingredients for Pepperoni Wraps
As always, this is a quick overview of the ingredients you will need for this wrap. For the complete recipe just keep scrolling.
- Deli Sliced Pepperoni: this refers to the large pepperoni slices, not the small pizza ones. If the smaller ones are all you can find, that is okay, you will just need to use a lot more to complete your dish. You can also use salami or another Italian cold cut, or combination to create a great tasting dish!
- Mozzarella cheese: I used sliced, but you can use shredded if that is all you have.
- Spinach: fresh spinach with stems removed.
- Tortilla: regular, gluten free or low carb.
- Pepperoncini peppers: these are jarred peppers that are often found near the olives.
- Mayonnaise and Pesto
How do you make a Pepperoni Wrap?
This is the easiest no cook wrap! Follow these super simple instructions for this delicious meal.
- Combine the mayonnaise and pesto to make a creamy pesto aioli. Spread the aioli liberally on the tortilla.
- Top with spinach leaves, cheese, pepperoni and pepperoncini peppers. Roll tightly and slice.
Can I make this wrap keto?
Definitely! We love a good low carb hack! While you can certainly use a lettuce wrap, this does have spinach in it, so if you need some more contrasting textures and flavors try these Keto Zucchini Tortillas.
You can also use a low carb, high fiber tortilla, which is readily available and keto-friendly. There are also handy cheese wraps, which I used in this quesadilla, and this wrap, that will work too! This can be a great low carb, meal prep recipe!
What sides go with wraps?
While this wrap is very filling, I often like to have a couple sides just to change things up. If you like chips but want to meal prep healthier snacks, this wrap would go super well with these Italian Herb Kale Chips or these Ranch Roasted Chickpeas (not keto).
If you’re serving this for dinner and would like more traditional sides, this Butternut Squash Mac & Cheese is SUPER comforting. The flavor of these Italian Baked Mushrooms would pair perfectly, too! For a no-cook side, try these Marinated Mozzarella Balls (PERFECT for packing)!
I love fries with my wraps (especially with a good dipping sauce), but you could try a ton of different veggie fries (like carrots, zucchini, green beans, or rutabaga) to add even more nutrients!
