Last week I shared this incredibly easy Balsamic Grilled Chicken. Today I’m sharing an amazing summer sandwich you will enjoy all season long! This Caprese Chicken Sandwich features tender grilled chicken, thick slices of tomato and mozzarella, fresh red onion and a quick and easy basil mayo. These are everything you love about a classic caprese salad in a warm toasty sandwich!

- Ciabatta bread
- Balsamic Grilled Chicken
- Fresh Mozzarella
- Tomatoes
- Basil
- Red Onion
- Pesto
- Mayonnaise
What does the cooking term Caprese mean?
While the term caprese is often used you may not know exactly what it refers to or its origin. Caprese is a salad consisting of tomato, mozzarella, fresh basil and olive oil or Italian dressing. The term originated in Italy and it is thought to have been created to mimic the colors of the Italian flag.
Now caprese is a staple all over the world, especially in the summer months when fresh tomatoes and basil are readily available. This Asparagus and Avocado Salad is one of my favorites. This easy salad is a a fresh spin on a caprese salad that is quick and easy.
How do you make a Caprese Chicken Sandwich?
- Begin my marinating and grilling the Balsamic Grilled Chicken.
- Slice and butter the inside of the ciabatta bread. Toast over medium heat in a large skillet or on your grill gates. Remove when lightly browned.
- Make the pesto mayo by combining the mayonnaise and pesto, set aside.
- To assemble sandwiches add Balsamic Grilled Chicken, thick slices of fresh mozzarella, tomatoes, thinly sliced red onions and basil leaves. Spread the pesto mayo evenly over the bread and top the sandwich.
- Serve immediately

This Caprese Chicken Sandwich is loaded with Balsamic Grilled Chicken, fresh tomatoes and mozzarella and an easy pesto mayo!
Ingredients
- 4 ciabatta rolls
- 1 tablespoon butter
- 4 Balsamic Grilled Chicken Breast (link below)
- 4 slices fresh mozzarella
- 2-8 slices of tomato (enough to cover the sandwich)
- 8 sliced basil
- 1/4 cup very thinly sliced red onion
- 1 tablespoon mayonnaise
- 1 tablespoon pesto
