I love this Buffalo Chicken Quesadilla! This meal is so easy to prepare, cooks quickly and is a huge crowd pleaser! Even your pickiest eaters will be ready and waiting at the table for this delicious, easy weeknight dinner. If you’ve only got a few minutes to make a meal, this should be it! This meal includes spicy buffalo chicken, two different types of melty cheese and crunchy tortillas! I included a creamy lime yogurt dip for a fun sauce!
I used rotisserie chicken for this chicken quesadilla recipe, making it super simple and quick. You could also use leftover chicken (or any other meat you prefer) or make this easy Slow Cooker Chicken. This is a fun meal to make together! You can set out different ingredients that would work in the quesadilla and everyone can customize their own dinner- this is a great way to get everyone involved in cooking!
You can also easily freeze these quesadillas, making them perfect for meal prep! If anyone in your family is gluten free or low carb, you can adjust the tortilla you use to make it fit to their specific diet. This meal is ready in 10 minutes and has barely any cleanup, which is exactly what you want for a weeknight dinner recipe!
Ingredients for Buffalo Chicken Quesadilla

For the Chicken Quesadilla:
- Medium sized tortillas- you could also use gluten free or low carb tortillas (I love these Zucchini Tortillas!)
- Shredded chicken– shredded beef or a ground meat would also work well here
- Mozzarella and blue cheese
- Buffalo sauce
- Butter
For the Lime Yogurt Dip:
- Plain, unsweetened yogurt
- Lime
- Chopped green onions
How to make Buffalo Chicken Quesadillas
You will love how easily this chicken quesadilla recipe comes together! First, in a small bowl, combine the chicken, both cheeses and buffalo sauce. Mix until combined. Spread half of the chicken mixture onto one half of the tortilla and fold over.Repeat with your other tortilla.
Stove Top Instructions: Heat a medium sized skillet to medium heat. When hot, add the butter and allow it to start sizzling. Add your quesadilla and cook for 4-5 minutes, or until browned. Flip and repeat for another 4-5 minutes.
Air Fryer Instructions: Preheat air fryer to 370 degrees F. Fill each tortilla with half the chicken cheese mixture and place in the air fryer. Cook for 4-5 minutes, flip, then cook an additional 4-5 minutes.
Lime Yogurt Dip
For this homemade dip, all you’ll need is plain yogurt, lime and chopped green onions. To make, simply combine and chill! Can you freeze quesadillas?
You sure can! You can freeze these Buffalo Chicken Quesadillas either before or after cooking. If you are freezing before cooking, assemble as described above. Then double wrap in plastic wrap and store in a freezer bag. If you are cooking before freezing, just allow to cool completely before wrapping in the plastic wrap and keeping in the freezer.
Storing and Reheating Quesadillas
If you are storing fresh quesadillas, allow to cool before putting in a glass or plastic container with an airtight lid and keeping in the fridge. These chicken quesadillas will stay fresh for up to four days. To reheat from frozen, place on a microwave safe plate and microwave for one minute, or until the cheese is melted. You can also reheat on the stove top, using a skillet.
What to serve with quesadillas

- 1 cup shredded chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup blue cheese
- 2 tablespoons buffalo sauce
- 1 tablespoon butter
Lime Yogurt Dip
- 1/2 cup plain, unsweetened yogurt
- 1 lime
- 2 tablespoons chopped green onions
Instructions
- In a small bowl, add your chicken, shredded cheese, blue cheese, and buffalo sauce. Mix well.
- Spread half of the chicken and cheese mixture to one half of a tortilla and fold over. Repeat with the remaining mixture and tortilla.
- Stove Top Instructions: Heat a medium-sized skillet to medium heat. Once hot, add half the butter and allow it to sizzle, then add your quesadilla. Allow to cook 4-5 minutes (until the tortilla is browned), flip, and cook another 4-5 minutes.
- Air Fryer Instructions: Preheat air fryer to 370 degrees F.
