I have always loved pasta salad because it is such a refreshing treat on a summer day! My favorite pasta salad is a greek style salad with tender pasta, cucumbers, tomatoes, tangy feta and olives. Today’s recipe is an easy Cucumber Salad that is a healthier, low carb salad that is just as delicious! It works perfectly as a side dish or meal prep lunch option!
What ingredients do you need for Cucumber Salad?
- Cucumbers
- Tomatoes
- Red onion
- Pepperoncini peppers
- Olives
- Olive oil
- Lemon juice
- Feta cheese
- Salt and pepper to taste
This is an excellent recipe you can customize based on your preferences. You can use black, olive or kalamata olives or a mixture of all of them for a super flavorful dish. You can also add fresh dill or basil if you have them on hand for a little extra kick.
How do you make Cucumber Salad?
- Combine all chopped vegetables, peppers and olives.
- Drizzle with olive oil, lemon juice and salt and pepper to taste. Stir well
- Fold in crumbled feta cheese when ready to serve.
Can I make Cucumber Salad ahead of time?
Yes, although I do think this has the best flavor if eaten within 24 hours of making. You can make this as far as 48 hours in advance but just wait to add the feta until you are ready to serve.
